Who does not love muffins? There are so many different flavours that everyone can pick his favourite. Here is one of mine. This Pear-walnut muffin is very juicy and not too sweet. The combination tastes great and they are easy and fast to make. Just try it out.

Pear-Walnut Muffins

Ingredients (for 12 muffins):

2 pears (about 300 g after peeling and removing the seeds)

40 g walnuts

2½ tsp baking powder

¼ tsp salt

240 g flour

80 ml oil

150 ml soy milk

100 g sugar

1 pack vanilla sugar

100 ml pear juice

You can also use more or less pears and/or nuts, depending on your taste. Instead of soy milk you can use any other plantbased milk.



1. Pre-heat the oven – 175° C two sided-heat

2. Chop the walnuts and dice the pears

3. Put the flour, baking powder and salt through a strainer in a mixing bowl

4. Add the sugar, vanilla sugar and the walnuts and mix it with a whisk

5. Now add the oil, the soy milk and the pear juice and mix it till everything is merged

6. Fold in the pear dices

7. Fill the dough in the baking forms and bake it for about 25 minutes on the medium rail
