Banana Cupcake with chocolate frosting

Chocolate Banana – fits together perfectly. Even if I did quite a mess in the kitchen with that chocolate frosting (my chocolate did not melt well – had to add loads of coconut oil to soften it 😛 ), it was definitely worth it. I must say I´m quite a muffin fan and these were the best muffins since long. And I was not alone with my opinion 🙂 Enjoy!

Banana Cupcake with chocolate frosting

Ingredients (for 12 muffins):

2 medium bananas (about 140 g)

140 g flour

50 g cacao powder

30 g starch

6 g baking powder

½ tsp salt

60 g sugar

60 g cane sugar

10 g vanilla sugar

200 ml plantbased milk

120 ml oil

For the frosting:

230 g vegan butter

100 g icing sugar

20 g cacao powder

100 g chocolate

 

Instruction:

1. Pre-heat the oven – 175° C two sided-heat

2. Put the flour, the starch, the cacao and the baking powder through a strainer in a mixing bowl

3. Add the salt, sugar and cane sugar and mix it with a whisk

4. Now put the bananas, the milk and the oil in a blender and mix it

5. Add banana shake to the dry ingredients and mix until everything is merged

6. Fill the dough in the baking forms and bake it for about 22 – 24 minutes on the medium rail

7. For the frosting stir the butter with a mixer, just a few seconds

8. Add sugar and cacao powder and keep on stiring for some minutes

9. Melt the chocolate and slowly add it while still stiring

10. Put the frosting in the refridgerator for about 20 minutes, then decorate the muffins with it 🙂
